I have had this idea mulling round and round in my head for over a year now, possibly even two. I would love to teach people how to make great free-from cakes. Teach them how to become great at Gluten Free baking or Dairy Free baking or Vegan baking.
When I am out on our cake stall at local Street Food Markets or at Food Festivals I get asked loads about how I get my cakes as good as I do ( sorry, sounds a little big headed, but that’s their words). I get told stories of free from baking fails. They are dense, they are crumbly, they taste nasty, the texture is horrible, they didn’t rise, the list of fails is endless. All these stories made me realise that I need to share my knowledge with you all.
I think baking is one of those skills everyone should be able to do, at least to a basic level. Everyone should be able to make a fabulous Victoria Sponge and a great Welsh Cake ( if they are welsh, like me) and maybe a Fruit Crumble. These are skills that used to be passed down from generation to generation, but sadly, I don’t think they are anymore. Or, in our case, the skills our parents and grandparents have are for regular baking so most of their skills won’t be much help to us now.
This is where I hope to step in. I was taught regular baking by my Mum, many years ago and have spent the last 5 maybe 6 years converting my skills and learning new skills to enable me to bake free from successfully. Sometimes the skill has been to trust the recipe, as what it’s asking me to do goes against my basic baking instict. When I have trusted, things have worked and I have learnt a new skill and when I have given in, I learn what not to do next time.
I know there are loads of fabulous gluten free, dairy free and vegan recipes on the internet and in cook books, but some are really bad and they seem to bury the good ones. But, a good recipe is not enough to create a great cake, you also need to be using the right ingredients and the right techniques.

You could have in your hands a fabulous recipe but if you have no idea what it wants you to do when it says to rub the fat into the flour or you have no idea that coconut milk doesn’t work as well as oat or soya milk when trying to create dairy free buttermilk. You are not going to create the cake from the recipe. The three elements go hand in hand.
This is what The Recipe Box is going to offer. Each class will be made up of 10 recipes and they will be accompanied by Better Baking Guides which will teach you techniques and guide to to the best ingredients to use.
We are starting with some classes that are perfect for beginners, they contain a range of cakes for you to make.
Introducing Baking includes Muffins, Cupcakes, Pastry, Sheet Cake, Buns and Brownies.
Introducing Desserts includes Cheesecake, Trifle, Crumble, Rice Pudding and Gateau.
Both classes are available as Gluten Free ( with dairy free guidance) or Vegan.
Coming soon will be more specific classes, which will focus on on type of cake with many different flavour variances, such as Cupcakes and Brownies.
